(I like use Santa Maria Seasoning which is a blend of garlic, parsley, salt, pepper mix)
Take the cauliflower and grate it as if you would cheese. (I have come to find this makes the best consistency for rice) Chop up onion in small bits and sauté with salt, pepper and coconut oil. Once onions are cooked throw in tomatoes and saute mixture. Throw in grated cauliflower and cook for about 5 mins.
Note: If you cook the cauliflower to long it will get mushy.
Note: Its best to always use fresh ingredients but I know with peoples schedules its hard to do that so canned is OK.
