Paleo Breakfast Yams with Eggs

One of the easiest things we do on Saturday mornings is Eggs with County potatoes! I absolutely love it and its a great weekend meal!

Ingredients:

2 Yams
Coconut Oil
Salt & Pepper
6 Eggs
Almond Milk
Water

Directions: 

Start by washing off the yams and cutting them into bite size equal sizes.  I always leave the skin on when I cook my yams but its really up to you!  In a frying pan add your fat/oil (i personally like coconut oil) and add the cut up potatoes to the pan, add salt and pepper to taste and let cook.  The best way I have found in cooking them is adding a little bit of water (about 1/4 cup) to the pan once it has started cooking (about 5 mins after you add the yams)  The point of this is to kind of steam the potatoes as you fry them, it will help cook them all they way through since they are fresh.  once they are a nice golden brown color turn the burner down to low.  A good way to tell if they are done is pushing a fork through them and if it slides right through they are done.

Now in a bowl whisk together the 6 eggs and add about a 1/3 cup of almond milk.  Once whisked throw the eggs in the frying pan with the potatoes and mix until eggs are cooked.

BOOM! You are all finished and can now enjoy this delicious meal! My favorite add on is some yummy hot sauce!
