Kitchen Sink Muffins
These are sooo tasty!!! I call them Kitchen Sink because you can really put ANYTHING you want in it! Enjoy!
1 Dozen Eggs
1 lb of ground Meat (I used Hot Italian Sausage but anything works)
1 cup of mushroom cut to bite size
1 Red Onion finely chopped
4 Roma Tomatoes
Handfull of Spinach cut to bite size pieces
1/2 Cup of Cilantro chopped (about half a bush)
1/2 tbsp of Cumin
Salt/Pepper to Taste
Pre-Heat Oven to 350 degrees and pull muffin pan out, grease muffin tin with coconut oil or bacon grease. Saute Ground Meat with red onion onion meat is cooked. Once meat is cooked turn off heat and let sit in pan. In a bowl whisk together all eggs and then add all ingredients to the eggs and stir. Pour mixture into the muffin pan, I usually fill this to the top.
Put in Oven for about 25-35 minutes. Just watch them to make sure the egg is cooked.
