Taco Salad – 21 Day Fix Approved!

Who loves TACOS!!!?? I do!! Omg..I really love tacos! They are my comfort food for sure! I try not to over do them because of the tortillas though so I decided on making a taco salad! I came up with this recipe that is absolutely delicious and really great for work as its easy to take on the go!

Ingredients

  • Romaine Lettuce – Chopped (I used a mixed romaine lettuce)
  • Chopped Tomatoes
  • Shredded Cheese
  • 1lb of Ground Turkey or Grassfed Beef (I usually do beef)
  • 1/4 Cup of Southwest Seasoning (Recipe from 21 Day Fix program)
  • 1 Medium Red Onion
  • 1 Orange & Red Bell Pepper
  • 2 Small Cans Diced Green Chiles
  • Olive Oil

Directions

Dice the peppers and onions to make them small bite size. Heat olive oil in a large skillet and add diced peppers and onions and cook until tender. Remove from the skillet and set aside.

Brown your ground meat in the skillet until almost done. Add chiles to the meat and finish cooking through. Add cooked onions and peppers to meat mixture, along with southwest seasoning and 1/4 cup of water (as needed). Simmer for 10 minutes.

As the mixture is simmering chop up romaine lettuce & tomatoes.

How I put it together is by measuring out everything, I measure in a Green Container the romaine & tomatoes (I usually do 2 Greens for this meal), then I measure 1 red of the meat mixture.  I then measure about half of a blue container of shredded cheese to go on top of my salad.

NOTE: Add some tortillas if you want some carb in this to make it tacos instead of a taco salad! 

Add a little Franks red hot sauce & about a blue container of greek plain yogurt (great sub for sour cream) and there you go!!! A yummy taco salad! its soo easy!
