So my favorite food is Mexican Food..I can’t get enough of it…but I also have trouble with dairy..so …that makes my life sad! lol Last night I decided to try something new..get my Mexican fix and also be healthy! It turned out just delicious! So i had to make sure I shared the yummy goodness with you!
Heat Oven to 375 degrees and put sweet potatoes in to cook for about 35 minutes. Check them as you go to see how they feel and look. I stabbed them with a fork to see if they were soft.
In a pan, heat up with some olive oil (about medium heat), add in garlic and onion. After a couple minutes add in the 2 bell peppers and crack a little sea salt in there. Then add in the beef and start to brown. Once it is about 90% brown add in your taco seasoning and stir in well. Then add in 2/3rd cup of water and stir. Let this simmer in the pan until most of the water has evaporated.
As it is simmering check on the potatoes, once they are done pull them out and let cool for about 3 mins. Cut in the middle but do not cut completely in half. With a fork mush up the insides and make a little bowl like within the potato. Then add about 1 cup of the meat and veggie mix into the potato (or more of you are feeling hungry!)
Top off with tomatoes, cilantro, cheese and sourcream! I only did Tomatoes and we ran out of Cilantro so unfortunately no cilantro for me! It is my FAVORITE thing in the world though…so I would recommend it 🙂
